Due to a lack of water in the area and limited space, Mustefa ferments his coffee for a short period of time before moving it to drying beds. Such method allows to achieve a result similar to light honey process. Mustefa has recently registered as an exporter in order to start selling his coffee directly to buyers, which he is now able to do since the changes to regulation in Ethiopia, allowing him to provide for his family and ensure his business is bringing profit. Due to the exceptional quality and taste, this coffee is marked as Specialty.
